
Enoki Mushrooms with Garlic & Vermicelli

Ingredients
150g Enoki Mushrooms
50g of Vermicelli
1tsp Salt
1 1/2 tsp Ligh Soy
1/2 tsp sugar
6 Cloves garlic
1tbsp Oil
2tsp Oyster Sauce
3 chilli peppers
Instructions
- Remove roots of Enoki mushrooms and fan out on a steam proof plate, set aside.
- Chop the garlic cloves and chilli peppers.
- Heat 15ml oil to 150°C.
- Sauce – Add Soy, Oyster sauce, salt and sugar to the minced garlic and chilly peppers. Pour into hot oil and stir well.
- Soak Vermicelli noodles in cold water to soften them, then remove from water.
- Add water to a pot and bring to a boil. Add vermicelli noodles and cook for 3 seconds. Drain.
- Place the noodles on top of the fanned out Enoki mushrooms and pour the sauce you made over the top of Vermicelli.
- Add water to a wok and bring to boil. Add the whole dish including it’s steam proof plate into the wok. Cover with wok lid and steam for a further 8 minutes.
- Remove the meal from the steaming wok and serve.
Notes
– Dish prefers hot chillies but alternatively mild chillies can be used instead.
– If you do not have a steam proof plate you can use a double boiler or steaming machine. Line with foil or parchment.
