Portobello Mushroom Fajitas

Let’s try mexican with a twist tonight! A healthy, quick, vegetarian meal for the whole family to enjoy. You won’t be disappointed with this loaded Portobello mushroom fajita recipe!

Ingredients

  • ¼ cup homemade taco seasoning, (or 2 tbsp store bought
  • 2 tablespoons olive oil
  • 1 tbsp Lime Juice – fresh
  • 1 1/2 pounds of Portobello mushrooms cut into this 3/4 inch slices
  • 1 red onion sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • Small flour Tortillas
  • Guacamole
  • Salsa
  • Cilantro

Instructions

  • Preheat oven to 450°F.
  • Slice Porotbello’s into strips.
  • In a large bowl make a marinade of Taco seasoning, Olive Oil and Lime juice.
  • Toss Portobello mushrooms in the marinade until evenly coated.
  • Spread ingredients across an oiled baking pan and baked for 20 minutes. If you want to add more char to the mushrooms, broil for a further 3 minutes
  • Serve with warm Tortillas, salsa, guacamole and fresh cilantro.
